Can't wait to read your book :-)<br /><br />As to olive oil: my partner Laura and I had an olive oil tasting with Slow Food and professional taster Marco Antonucci in Bergamo back in 2012. It was enlightening and very very interesting and improved our products (we own a little organic cookery and pasta factory).<br />Here you can find some tips Mr Antonucci shared with us. The article is in Italian but Google Translate can help :-)<br />Or I can try to translate it if there's something you can't catch. All oils are from new harvests, imported (or stocked, if Californian) in bulk, and bottled to order. For the quality they're dirt cheap.
